メイプルシロップといえば、カナダのお土産として有名です。そのメイプルシロップを作るのは２月から４月にかけてがベストシーズンということで、今日は知っているようで意外に知らないメイプルシロップの作り方について、Ez Commの講師でカナダ出身のトレバーに解説してもらいました。

ちょっと長い英語の文章ですが、写真を見ながら、想像力も使って読んでみましょう。

Maple Syrup Time!!!

February, March, and April are the best times for making maple syrup in Quebec (Eastern Canada), where 75% of the world’s maple syrup is made. Maple syrup is usually eaten at breakfast in North America on hotcakes, waffles, French toast, and ice cream. It is also used in cooking and baking. There are 3 main steps to make maple syrup:

Step 1: Tapping
As the weather becomes warmer, the sap water in the roots of maple trees starts to move up the tree. We put a tap the tree in the tree and collect the sap in a bucket. Trees need to be around 40 years old. They give about 1 liter of sap a day.



Step 2: Boiling
Many buckets of sap are gathered and brought to the Sugar Shack. The sap looks like water. It has about 2% sugar. The sap is boiled until most of the water is gone. It takes about 40 liters of sap to make 1 liter of maple syrup!






Step 3: Bottling
The taste of maple syrup depends on the tree, area, and amount of boiling. Most maple syrup is light grade, but medium, amber, and dark varieties are also available. They have much heavier tastes.





When I was young, we used to go to a Sugar shack for a big breakfast and pour maple syrup over everything! Then, we went to the boiling room and watched as they poured maple syrup onto the cold snow. We took a stick and rolled the cooling syrup to eat it like a lollipop. Nice memories…
